Pakistani Kima

Saute in skillet or pot: (one with a lid)
3 T Butter/Margarine
1 Cup chopped onion
1 clove garlic, minced
Add:
1 lb ground beef
Brown well. Stir in:
1 T Curry Powder
1 1/2 t salt
dash pepper
dash each of cinnamon, ginger, and tumeric
2 Cups tomatoes chopped
2 Potatoes, diced
2 Cups frozen peas or green beans
Cover and simmer for 25 minutes. Serve with rice.
Garnish with shredded coconut!
I made this for my family last night, and I was pleased that it was a hit! We all love rice (brown basmati), which is terrific because it’s so easy! This Indian curry dish isn’t too overpowering, and it isn’t spicy at all. The shredded coconut is my favorite part! This bit of added sweetness makes me feel as though I’m having some dessert with my supper.

Meal Planning Monday

We thoroughly enjoyed last week's meals from Sandi Richard's cookbook, The Healthy Family. Cooking new recipes makes dinner something I look forward to! And I was pleased with her simple recipe format.

On to week number 2:
Monday: Hot Beef Pasta on Caesar Salad
Tuesday: Maple Cranberry Chicken Breasts with Rice and Broccoli
Wednesday: Curried Salmon and Egg Noodle Bake with Peas
Thursday: Savory Pot Roast with Harvest Veggies
Friday: Thai Chicken Pizza with Veggie Toss

Because my husband is working afternoon shift this week and next, we will probably have these meals for lunch instead. That way we can all enjoy them together, AND mommy doesn't have to cook in the evening. ;)

This menu plan has been taken from Sandi Richard's cookbook, The Healthy Family. I have adapted some of the recipes to suit what we already have in our freezer, an abundance of game meat!

Meal Planning! New Year 2009

Seeing's how it's been over a month since I last blogged about ANYTHING, I thought I'd make this one extra long and detailed.

Last week I had my wisdom teeth out, so I am banned from any foods too pokey or chewy... soft foods only. How boring. Needless to say, it made meal planning for this week particularly difficult..and, I didn't really 'meal plan' as I usually would. For some reason, I found myself planning out next week's meals and recipes, so I thought I'd share them today!


Monday: Chicken and Dumplings with Peas and Carrots and Canned Pears
Tuesday: Tasty Elk Tenderloin with Baked Sweet Potato and Couscous
Wednesday: Stir Fry on Rice with Egg Drop Soup
Thursday: Pancakes and Eggs with Cantaloupe Slices
Friday: Crockpot White Chicken Chili and Corn Bread with Honey Butter and Choco Pudding

Monday Recipes
Notes for Monday:
Tonight's dish can be as easy as you would like to make it. If you want fast prep, use broken lasagna noodles as your dumplings.
Reserve some chicken for Wednesday's stir fry.
Boil a chicken carcass to make chicken broth! Make extra for egg drop soup on Wednesday.

Chicken and Dumplings
2 cups cooked shredded chicken
3 cups Chicken broth (made from chicken carcass)
Garlic salt
1 can Cream of Chicken soup
broken lasagna noodles
or
Homemade Noodles:
2 cups of flour
1 rounded tsp of baking powder
2 eggs
Mix ingredients for noodles. You want workable dough so if they are too dry add a few drops of water, too wet a bit more flour. Roll and cut; a pizza cutter is the best way. If you get too much baking powder they will have a salty 1/2 cooked taste. Cook noodles in broth. Your cooking time will depend on how thick the noodles are; you will just have to taste it. ;-)
Add soup and seasonings to taste. Add chicken in when the noodles are almost cooked. You may sprinkle with parsley for some color if you would like.

Tuesday Recipes

Tasty Elk Tenderloin
1/3 cup all-purpose flour
1/2 tsp salt
1/2 tsp pepper
2 elk tenderloins (about 1 lb. each)
2 tbsp butter
1/2 cup onion, chopped
1 garlic clove, minced
2 cups applesauce, unsweetened
1/4 cup brown sugar, packed
1/4 cup soy sauce
1/4 cup apple juice
1/2 tsp ginger, ground
Preheat oven to 350° F. Combine flour, salt and pepper in a small, shallow bowl. Cut tenderloins into six pieces and flatten each cut piece to about a 1 inch thickness. In a skillet, melt butter. dip each piece into the flour mixture and then brown in skillet, turning to brown on both sides. Place elk in an ungreased baking dish. In the same skillet, saute the onion and garlic until tender. Add remaining 5 ingredients and bring to a boil. Pour this mixture over the elk and cover and bake.

Wednesday Recipes

Stir Fry
14 oz. bag stir-fry frozen vegetables
1 lb. Leftover cooked chicken (from Monday's supper)
1 bottle Kikkoman Stir-fry sauce
olive oil
Basmati rice
Add frozen vegetables and cook until hot and water from frozen veggies cooks out. Add chicken to veggies and heat through. Pour 1/2 - 3/4 bottle of the stir fry sauce over everything and simmer until bubbly. Serve over rice.

Basmati Rice

Egg Drop Soup
3 cups chicken broth
1 green onion with top
1 sp. salt
dash of pepper
2 eggs, slightly beaten
Heat chicken broth, salt and pepper to boiling in saucepan. Stir green onions into eggs. Pour egg mixture slowly into boiling broth, stirring constantly with fork to form shreds of egg.

Friday Recipes

Crockpot White Chicken Chili
4 chicken breasts, cubed
1 cup chopped onion, cooked (from freezer)
2 cloves garlic, finely chopped
1 1/2 cups chicken broth
1 tsp ground cumin
1 tsp dried leaf oregano
1/2 tsp salt
1/4 tsp Tabasco sauce
2 cans (about 15 ounces each) great northern beans, drained, rinsed
12 to 15 oz. corn
2 Tbsp. chopped fresh cilantro, optional
Mix onion, garlic, chicken broth, cumin, oregano, salt and Tabasco in 3 1/2 to 6-quart crockpot. Add cubed chicken breasts. Cover and cook on low for 4 1/2 to 5 1/2 hours, or until chicken is tender (this may vary depending on how hot your crockpot cooks). Stir in beans, corn, and cilantro, if using. Cover and cook on low 30 minutes or until thoroughly heated.


Cornbread with Honey Butter
1 cup cornmeal
1 cup flour
1/4 cup sugar
3 tsp. baking powder
1 tsp. salt
1/4 cup olive oil
1 cup milk
1 egg
Preheat oven to 425°F. Put half of the olive oil in a 9x9x2 cast iron skillet and preheat in oven without burning oil. Mix all remaining ingredients in a bowl. Pour batter into preheated cast iron skillet and bake for 20-25 minutes or until done.
Note: if you do not have a cast iron skillet, spray a pan with non-stick spray and mix all of the olive oil into the batter. Do not preheat your pan if it isn't cast iron.
Serve with softened butter that has been mixed with a little honey to taste.

Meal Planning Monday

Monday: Garden Vegetable Lasagna
Tuesday: Leftover Lasagna
Wednesday: Asian Meatball Soup

Friday: Lime Roasted Chicken with Spinach Salad and Sweet Potato Fries

This menu seems a little more ethnic than what we're used to, but I found some interesting recipes this week and happen to have most of the ingredients!

I am also making Sweet Potato and Apple soup for my daughter and I for lunch this week. I learned that sweet potatoes are ranked as one of the most healthful vegetables, even above SPINACH! :) So, I want to incorporate more of them into our diets. My DH isn't so sure about this, but perhaps I can sway his dislike for sweet potatoes in some new recipes........

I am very excited about this week's menu. I hardly had to shop for groceries because the meals use items I have on hand already! $$$ And yes, I broke down last week and bought a family pack of chickens thighs.

Once again this menu has been adapted from Menus4Moms, but I have deleted and added some recipes. The Cannelloni was my own idea, because I still have pasta shells leftover to use from a few months back! The sweet and sour meatballs are on her schedule, as is the roast for Monday night's meal. MmmmMmmm.... I love having roast at the beginning of our week, that way I can reheat it in gravy and have french fries and caesar salad with it! Which is one of my mom's quick dinners, and one of my favorites too. :)

Meal Planning Monday

My hubby starts back to work this week after three months of paternity leave. So it's back to making things that will make great leftovers for his lunch! Here's this week's menu.

Monday: Soft Tacos
Tuesday: Roast Moose, Roasted Potatoes, Peas & Carrots with Dinner Rolls
Wednesday: Moose Barley Soup (Frozen) with Dinner Rolls
Thursday: Shepherd’s Pie with Salad
Friday: Deer Pepperoni Pizza

It's funny; we were over at a friend's house last week and she served us Cranberry Chicken (which was absolutely delightful!). I told her that chicken has become somewhat of a delicacy in our household as our freezer is full of red meat these days. Welcome to being married to a hunter. I am not complaining, by the way, it just seems odd that America's most common meat has become our specialty.

Meal Planning Monday

Here is a list of this week's dinners. We are having our Thanksgiving dinner with family this afternoon.

Monday: Thanksgiving
Tuesday: Burgers & Fries
Wednesday: Meatloaf with Baked Rice and Peas
Thursday: Casserole from freezer
Friday: Thai Noodles with Vegetables and Peanut Sauce

Usually, I plan for hamburgers one night and then meatloaf the next day. Because I make my own patties from half of one package of ground moose or elk (I only need to form 4 burger patties for our small family), I have enough ground meat leftover to make a small meatloaf for the next dinner.

Being married to a hunter and with hunting season upon us now, I have an abundance of red-meat in my freezer (already). My meal plans will probably be comprised of mostly red-meat now....

Tuesday: French Dip Sandwiches, Broccoli, & Pasta Salad
Wednesday: Mexican Corn Chowder, Dinner Rolls, Salad

I am really looking forward to this week's menu, especially the BBQ shish Kabobs on Friday night. I love Pinapples :)

Monday - Swedish "Moose"-balls over Brown Rice with Buttered Lima Beans, and VitaMix Orange Sorbet for dessert

Tuesday - Slow Cooked Ham with Corn and Steamed Brocolli, & Freshly baked French Bread on the side

Wednesday - Baked Potato with all the fixings with Poppy Seed Fruit Salad and Lemon Pudding for dessert

Thursday - Chicken Rotini with Caesar Salad and freshly baked Focaccia Bread dipped in Olive Oil and Parmesan Cheese

Friday - Ham and Pineapple Kabobs served over Rice with Tossed Salad

Usually I try to do my meal planning on Mondays, and then I head to the grocery store. This plan was adapted from a website called menus4moms.com

  • Monday - Chicken Lasagna & Corn
  • Tuesday - Crockpot 'moose'-Rib Casserole over Egg Noodles with buttered Lima Beans / Jello for dessert
  • Wednesday - Moose & Pasta supper with Salad and freshly baked French Bread
  • Thursday - Chicken Pita Pockets with Potato Salad
  • Friday - Pizza & Leftover Salads / Microwave S'mores for dessert
