Colossians 3:1-2

"Since, then, you have been raised with Christ, set your hearts on things above, where Christ is seated at the right hand of God. Set your minds on things above, not on earthly things."
Col. 3:1-2
I have been pondering these two verses over the past week or so and am amazed at how many times this concept has come up with different Bible studies or even the sermon at church on Sunday.

Meal Planning Monday

Monday - Leftover Chicken Lasagna and Caesar Salad
Tuesday - Roasted Chicken Breasts on a Rice Pilaf with Peas
Wednesday - Pasta and Beef dinner with Tossed Salad
Thursday - Chicken with Manderin Oranges and Steamed Broccoli with Spinach Salad
Friday - Chicken Pesto with leftover Spinach Salad

Lots of chicken dishes this week. I have these chicken breasts in my freezer that are in desperate need of eating!!!

Shout for Joy!

Shout for joy to the Lord, all the earth.

Cajun Chickpeas

Cajun Chickpeas

1 Cup Chickpeas (drained from the can, or soaked and cooked from dried)
Drizzling of Extra Virgin Olive Oil
Sprinkling of Cajun blend spices

Spread chickpeas on a baking sheet and drizzle with Olive Oil and sprinkle with Spices
Bake at 400 degree oven for 30 minutes, or until crispy
Yummy and full of fibre and protien!
Serving size 1/2 Cup
1.5g Fibre - 5.5g Protien

Meal Planning Monday

I am really looking forward to this week's menu, especially the BBQ shish Kabobs on Friday night. I love Pinapples :)

Monday - Swedish "Moose"-balls over Brown Rice with Buttered Lima Beans, and VitaMix Orange Sorbet for dessert

Tuesday - Slow Cooked Ham with Corn and Steamed Brocolli, & Freshly baked French Bread on the side

Wednesday - Baked Potato with all the fixings with Poppy Seed Fruit Salad and Lemon Pudding for dessert

Thursday - Chicken Rotini with Caesar Salad and freshly baked Focaccia Bread dipped in Olive Oil and Parmesan Cheese

Friday - Ham and Pineapple Kabobs served over Rice with Tossed Salad

Once again, this menu was taken from Menus4Moms and adapted to our personal tastes and lifestyle. I've noticed they don't always offer the most healthful food choices...

Meal Planning Monday

Usually I try to do my meal planning on Mondays, and then I head to the grocery store. This plan was adapted from a website called menus4moms.com

  • Monday - Chicken Lasagna & Corn
  • Tuesday - Crockpot 'moose'-Rib Casserole over Egg Noodles with buttered Lima Beans / Jello for dessert
  • Wednesday - Moose & Pasta supper with Salad and freshly baked French Bread
  • Thursday - Chicken Pita Pockets with Potato Salad
  • Friday - Pizza & Leftover Salads / Microwave S'mores for dessert

Reality Check - I am so thankful

My husband came home from work last night and told me a story about somebody's close friend at work. This friend has a little girl (about our own daughter's age, 2) and she was playing in the soccer field where her daddy plays soccer with other friends. Last weekend she was perfectly happy and healthy, running around, being two. :) Shortly afterward, perhaps that evening, she started coming down with flu-like symptoms... by Monday or Tuesday evening, she was airlifted to Children's Hospital. But before they arrived at the hospital, she had already passed away. The doctors diagnosed her with bacterial meningitis.

After hearing this story, I feel thankful to have my daughter with me each day, and I am also reminded of how fragile life really is; we really don't know what our futures hold. But we do know that God knows each day of our lives. I am reminded of one of my favourite hymns: Because He Lives

-- Because He lives I can face tomorrow,
Because He lives all fear is gone;
because I know He holds the future.
And life is worth the living just because He lives.
