Meal Planning Monday

We thoroughly enjoyed last week's meals from Sandi Richard's cookbook, The Healthy Family. Cooking new recipes makes dinner something I look forward to! And I was pleased with her simple recipe format.

On to week number 2:
Monday: Hot Beef Pasta on Caesar Salad
Tuesday: Maple Cranberry Chicken Breasts with Rice and Broccoli
Wednesday: Curried Salmon and Egg Noodle Bake with Peas
Thursday: Savory Pot Roast with Harvest Veggies
Friday: Thai Chicken Pizza with Veggie Toss

Because my husband is working afternoon shift this week and next, we will probably have these meals for lunch instead. That way we can all enjoy them together, AND mommy doesn't have to cook in the evening. ;)
